Celebrating with Mama Chu

So, it’s been a while…

I guess it’s been hard getting back into the groove of blogging after taking a break due to traveling and other events. I may also have just been putting off blogging because it feels overwhelming at times. I’ve been thinking about going in the direction of a lifestyle blog instead of being exclusively a food blog. I have a few ideas, but it seems hard to find a balance between creating content I’ll genuinely enjoy making and creating content I think others will enjoy. I don’t want to lose the joy of creating and celebrating simply to appeal to others.

Anyhow, this is just a personal struggle I felt like I needed to share to keep myself accountable. I know I’ll change and grow as I continue to figure out life, but I want to stay genuine. After all, the theme of my blog is that nothing’s too small to celebrate. I want to celebrate life, people, the big and the small, and everything in between. Things might not always look glamorous, but I want to be okay and happy with sharing it anyways. And if you’re visiting I hope you’ll find some joy in it too!

This week I made something fun with Mama Chu—Fan Tuan!

Fan Tuan is a Taiwanese breakfast staple that’s like a Asian breakfast burrito. I know it doesn’t look super appealing, but it’s delicious. It’s basically egg, pickled radish, pork sung, and crispy fried dough wrapped in warm sticky rice. I know those ingredients probably sound strange and foreign if you’re unfamiliar with Chinese/Taiwanese cuisine, but if you give it a try you might end of really liking them :)

Ingredients:

  • 2 cups Sticky Rice (we used brown sticky rice as a healthy alternative but white sticky rice is good too)

  • 2 eggs

  • 1 tube Crescent Rolls

  • Pickled Radish

  • Pork Sung (dried pork product)

Instructions:

  1. Cook sticky rice according to rice cooker or package instructions.

  2. Heat pan over medium-low heat and add some cooking oil. Scramble the eggs and pour into heated pan. Once the bottom of the scrambled egg has formed, fold 1/3 of the egg to the middle. Let it cook and once formed, fold the middle to the right third. Remove from heat to cool.

  3. Heat a small sauce pan with oil about 1 inch high over medium high heat. Open the Crescent Rolls and cut the dough into strips about 1 inch wide and 4 inches long. Fry the pieces, being sure to turn the dough every few seconds. Remove from heat when golden brown and place on paper towel to dry. Fry a second time for extra crispiness.

  4. Place a dish towel or cheesecloth in a gallon size bag. Place a piece of saran wrap on top of the bag.

  5. Holding the bag in one hand, start layering the ingredients. Start with a layer of sticky rice and fill with the other ingredients: picked radish, egg, pork sung, and fried dough.

6. Finish with a layer of rice on top. Then use the bag to shape the ingredients into a roll.

7. Use the saran wrap to wrap the roll and remove from the bag. You can eat it like a burrito or slice it into two to enjoy! :)
