INGREDIENTS:

  • 2 cups heavy cream

  • 1 Tbsp vanilla extract

  • 3 egg yolks

  • 2 Tbsp granulated sugar

  • Berries

INSTRUCTIONS:

  1. Heat the heavy cream in a sauce pan. Once it begins to simmer add the vanilla extract. Simmer for 1 minute, then remove from heat.

  2. In a mixing bowl, whisk the egg yolks and sugar until well-blended.

  3. Slowly pour the heavy cream into the egg yolk mixture, being sure to whisk quickly so as to not curdle the egg yolks.

  4. Allow the mixture to cool, then pour into a liquid measuring cup or another device with a spout.

  5. Preheat the oven to 325 degrees Fahrenheit.

  6. Place (6) 6 oz ramekins in a roasting pan and fill them about half way high. Place the pan into the oven and use a liquid mesauring cup to fill it up with about 5-6 cups of water. The water should cover the bottom halves of the ramekins.

  7. Bake for 45-50 minutes. The creme brulees may still jiggle, but their centers should be set.

  8. Allow them to cool, then place in the fridge for at least 2 hours.

  9. Before serving, coat the top of each creme brulee with granulated sugar.

  10. Torch the top until the sugar caramelizes. Serve with berries and enjoy :)
