Toffee Chocolate Chip Cookie Skillet
Hello Guys!! This week's recipe is super easy to make and super delicious :) I mean, who can go wrong with a warm cookie and ice cream, right? This toffee chocolate chip cookie skillet is perfect for a sleepover or movie night or if you're just craving that perfect, warm, gooey cookie. Also, if you're a fan of sweet and salty I'll include the recipe for my salted caramel below, but you can just buy some from a store if you don't got time for that. It'll still be delicious :D
INGREDIENTS:
1 cup unsalted butter, softened
1 cup brown sugar
1/2 cup granulated sugar
1 1/2 Tbsp vanilla extract
2 eggs
2 cups all-purpose flour
1 tsp baking soda
3/4 tsp salt
1/3 cup heath bar, chopped
1/3 cup chocolate chips
INSTRUCTIONS:
1. Preheat the oven to 350 degrees Fahrenheit. Line a 9 inch cast iron skillet with parchment paper.
2. Cream butter and sugars in a mixing bowl until well-incorporated. Add vanilla extract. Add in eggs, one at a time.
3. Measure the flour, baking soda, and salt in a seperate bowl. Whisk together to combine.
4. Add the dry ingredients in 3-4 increments to the mixing bowl and mix well.
5. Remove the mixing bowl from stand mixer or hand mixer and stir in half of the heath bar and chocolate chips.
6. Scoop the cookie dough onto the parchment paper in the skillet. Use the spatula to spread the cookie dough. Sprinkle the top of the cookie dough with the remaining heath bar and chocolate chips.
7. Bake in oven for 30-35 minutes if you want a gooey cookie or 35-40 minutes for a set cookie.
8. Remove from oven and let cool for at least 10 minutes. Serve with ice cream of your choice and drizzle with salted caramel. Enjoy!
BONUS RECIPE: Salted Caramel
INGREDIENTS:
88g granulated sugar
30mL water
60mL heavy cream
44g unsalted butter, cubed
salt, to taste (I used about 1/4tsp pink himalayan salt)
INSTRUCTIONS:
1. Place sugar and water in a sauce pan. Heat over medium-low heat. Once the sugar has dissolved turn the heat to medium-high. Remove from heat when the mixture turns golden brown.
2. Microwave the heavy cream for 30 seconds. Add the heavy cream to the sauce pan. Be careful as the mixture will bubble and steam will rise.
3. Add the butter in increments and mix in. Add salt to taste.
4. Drizzle over ice cream or other desserts!
